# 3 For making this delicious homemade chocolate fudge you will need the following ingredients.
Ingredients:
6 oz – Evaporated milk
1 and 3/4 cups sugar
1/2 teaspoon salt.
1 1/2 cups marshmallows
1 1/2 cups semisweet chocolate chips
1 teaspoons- vanilla extract
2/3 cup chopped walnuts (optional)
Method:
Mix up evaporated milk, sugar and salt. Heat it till it starts to boil then reduce the heat and let it simmer for 5 minutes. Remove from fire and add all the remaining ingredients to it and stir until the marshmallows totally melt into it. Then pour the mixture into a buttered 9 inches square pan and let it cool down, cut it into pieces and its ready to serve.

Directions:

1/2 teaspoon Cinnamon.
Directions:
In heavy saucepan bring mixture to boil.
Stir constantly about 4 to 5 minutes. Turn heat to low and continue to stir (about 3 to 5 minutes) making sure sugar is completely dissolved.
Allow to cook without stirring for 15 minutes on lowest possible heat, uncovered. Transfer to top of double boiler over simmering water if to be used as a basting sauce for ribs or chicken during baking; or cool sauce and refrigerate covered to use in 30 days.
This BBQ Sauce freezes well.
--Kenny Rogers Corn Muffins--
1/2 cup vegetable oil
1/4 cup honey
1 tablespoon Grey Poupon Dijon mustard
1 teaspoon ketchup
1 teaspoon granulated sugar
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
2 1/2 tablespoons white vinegar
1/2 teaspoon concentrated hickory liquid smoke flavoring
1/4 teaspoon lemon juice
1 egg yolk
1 teaspoon water.
Directions: Preheat oven to 400 degrees.
Cream together butter, sugar, honey, eggs and salt in a large bowl. Add flour, cornmeal and baking powder and blend thoroughly. Add milk while mixing. Add corn to mixture and combine by hand until corn is worked in.
Grease a 12-cup muffin pan and fill each cup with batter.
Bake for 20-25 minutes or until muffins begin to turn brown on top.

--Kenny Rogers Fire-And-Ice Chili--
1 20-ounce can pineapple chunks in syrup
2 pounds lean boneless pork roast cut into 1-inch cubes
2 tablespoons olive oil
1 medium yellow onion chopped (1/2 cup)
1 clove garlic minced
1 28-ounce can tomatoes cut up
1 6-ounce can tomato paste
1 4-ounce can diced green chili peppers drained
1 green pepper chopped 3/4 cup)
1 medium yellow onion chopped (1/2 cup)
2 cloves garlic minced
1/4 cup chili powder
4 teaspoons ground cumin
1 to 3 tablespoons seeded and finely chopped jalapeno pepper
1/2 teaspoon salt
Chili toppers: sliced onions, sour cream, shredded cheddar cheese.
Directions:
1. Drain pineapple, reserving syrup.
2. In a Dutch oven, cook pork, half at a time, in hot olive oil till brown. Return all the meat to the pot. Add the first chopped onion and 1 clove garlic. Cook over medium heat till onion is tender, stirring occasionally.
3. Add the reserved pineapple syrup, undrained tomatoes, tomato paste, green chili peppers, the green pepper, 1 onion, 2 cloves garlic, chili powder, cumin, jalapeno pepper and salt.
4. Bring to boiling. Reduce heat. Cover and simmer the chili for 1 1/2 hours, stirring occasionally. Add the pineapple chunks. Cover and simmer for 30 minutes more.
5. Let diners add their own toppers. Makes 8 to 10 servings. Note: To increase the spiciness of the chili, add 2 more tablespoons of the jalapeno pepper.
--Kenny Rogers Vanilla Muffins--
125g butter
80g sugar
1 tsp vanilla essence
2 eggs
125g flour
2 tbsp milk
50g buttercream
Directions:
1. Cream the butter and sugar till white as the night.
2. Add in the eggs one by one and beat it like you mean it. 3. Sift the flour and fold it in slowly (quite using the beater).
4. Blend in the milk.
5. Add in the buttercream.

Ingredients
2 quarts apple juice
1 cup Worcestershire sauce
1 cup orange juice
1 cup light brown sugar
1/2 cup olive oil
1/2 cup lemon juice
2 tablespoons hot sauce
1/2 cup apple cider vinegar
1/2 cup salt
Preparation
Heat and whisk together until sugar and salt dissolve.
Jack's Old South Competition Vinegar Sauce
Ingredients
2 cups cider vinegar
3 tablespoons ketchup
2 tablespoons paprika
2 tablespoons brown sugar
4 teaspoons kosher salt
1 tablespoon hot sauce
1 teaspoon cayenne -- (1 to 2)
1 teaspoon ground black pepper -- (1 to 2)
Preparation
Combine all the ingredients in a nonreactive mixing bowl, mixing until the sugar and salt dissolve. Taste for seasoning, adding pepper as needed.
Transfer to a clean, sterile jar and refrigerate. This vinegar sauce will keep for several months.

1 clove garlic crushed or minced
6 cloves of garlic halved
2 green onions thinly sliced
1/4 cup butter
lemon wedges
Rub the clove of minced garlic on inside cavity of fish. Lightly grease the cooking grill with olive oil. Place fish in center of the cooking grill. Grill for 30 minutes or until the fish flakes when tested with the fork from your barbecue grill set. One alternative is to stuff the larger fish(like snapper) with cooked wild rice.
While the fish is cooking, prepare the garlic butter, in a small stainless steel saucepan from your cookware set, saute halved cloves and green onions in butter over low heat for 12-15 minutes or until tender and golden brown.
Remove the fish with a long handled spatula from your barbecue grill accessories and arrange the fish on a serving platter. Spoon garlic butter over top and serve with the lemon wedges. It makes 4 servings. Enjoy with a nice spring salad with vinaigrette dressing, roasted veggies, French Bread or rolls and a nice dry white wine or pino noir.

The onions and peppers will cook pretty fast, like 3-4 minutes and the asparagus depending on how thick will take 5 to 7 minutes. So remember to do towards the end of the fish cooking time.

Peanut Butter Hot Cocoa Oatmeal Cookies Recipe
OK - so I obviously wasn't too sure what to call these cookies, but they sure were good. I have ended up with lots of free hot cocoa recently, so for some reason I have decided that I need to figure out a way to put the hot cocoa into cookies. I have no idea why I wanted to do this, but after my first attempt failed miserably, I was more determined than ever to make cookies with hot cocoa. This is probably silly, but I really hate to fail at something, especially cookies. And trust me, the first batch was so bad I actually threw them out. (I have never thrown cookies away!) They looked like really bad fruit roll ups gone bad.
All that to say, after many recipe attempts, I have now come up with apparently the BEST COOKIES EVER!! according to my expert 12, 3 and 1 year old. The baby doesn't count, but I am sure that he will love them in a few years as well. OK, I don't know that they are the BEST EVER!!, but they are at least 1,000 times better than my first attempt. So, if you have tons of free hot cocoa, and have always wanted to put it in cookies (surely there is someone else out there like me... Right???), then this is the recipe for you. Hope you enjoy!!!
Peanut Butter Hot Cocoa Oatmeal Cookies Recipe

• 3 cups oatmeal
• 1/4 cup whole wheat flour (You can use white, I just always try to use whole wheat.)

Also, I don't think I would use a packet with marshmallows because I would think they would become hard & crunchy - I learned that on batch 3 or 4 or my attempts.)
• 1 tsp baking soda
• 1 tsp baking powder
• 1 tsp salt
• 1 cup packed light brown sugar
• 1 cup sugar
• 1 cup softened butter
• 1/2 cup peanut butter
• 2 eggs
• 1 1/2 tsp. vanilla
• 2 cups peanuts chopped
• 2 cups M&M's (Originally, I probably would have used chocolate chips, but like I said, I've tried TONS of recipes, and I am now out of chocolate chips.)
Instructions
1. Preheat oven to 350 degrees.
2. Mix the oats, flour, hot cocoa, baking soda, baking powder and salt together.
3. In a separate bowl mix sugar, butter and peanut butter.
4. Add the eggs one at a time and continue to mix. Add the vanilla, continuing to mix.
5. Then add the oat mixture slowly and continue mixing.
6. Stir in the peanuts and M&M's.
7. Bake these cookies for about 13 minutes and enjoy!

• 1 tbsp. strawberry jam

Cover and let rise until light and fluffy. Fry in deep hot fat. Glaze with a water and sugar mixture. Note: You can also frost and decorate with colorful sprinkles, if desired.
CAKE DONUTS
1 cup sugar
2 eggs, beaten
1/2 cup sour milk
1 tsp soda
1/2 cup sweet milk
1 tsp baking powder
2 tbsp melted lard or shortening
1 tsp vanilla
pinch of salt
flour
Mix sugar and eggs together. Add sour milk and soda mixed in milk. Add sweet milk and melted lard. And vanilla and flour with salt and baking powder mixed into the flour. Use enough flour to make a dough stiff enough to roll and cut donuts with a donut cutter. Makes 30.

1. Choose a wine that has less than 13% alcohol.
2. Don't buy the cheap stuff.
3. Start drinking only when you are sober/hangover-free.
4. Have a hearty meal and a handful of almonds before you start drinking.
5. Start drinking early, preferably between 5 p.m. and 6 p.m. 7. After the first two glasses, and showing off your amazing small talk skills, drink two large glasses of water and take a 30-minute/1 hour break.
8. After the break, drink no more than a glass of wine per hour and eat something between each glass or have a light meal later in the evening. 10. Stop drinking before 11 p.m. If you haven't finished the wine, throw it away or store it.
11. After you are done with the wine, have a small snack and drink two large glasses of water.
12. Go to sleep before midnight and have a glass of water by your bed. If you wake up thirsty in the middle of the night, take a sip of water.
13. Try to sleep at least 8 hours.
14. Wake up hangover free.

• 1/4 kg. shrimp, peeled and deveined
• 6 garlic cloves, minced
• 1 large onion, diced
• 1 bay leaf
• 3 1/2 cups diced tomatoes

• 1 cup clam juice
• 1 tbsp. oil
• 1 tsp. salt
Heat oil in a large pot over medium-high heat. Sauté onions for 2-3 minutes until tender, add garlic then sauté for another minute. Add white wine, clam juice, tomatoes, bay leaf and salt then bring to a boil. Lower heat to medium and simmer for 15-20 minutes. Throw in clams, calamari rings, mussels and shrimps and stir well to combine. Cook for 6-8 minutes until all shells have opened and shrimp is pink. Transfer to a large serving bowl, garnish with parsley and serve.
Garlic and Thyme Mahi Mahi
What you need:
• 4 mahi mahi fillets
• 3 cloves garlic, minced
• 1/2 medium onion
• Juice of 2 lemons
• 1/2 tbsp. olive oil
• 1/2 tbsp. fresh thyme leaves
• Salt and black pepper to taste
In a medium bowl, combine lemon juice, thyme leaves, salt and pepper. Mix well. Place fillets in a plate and coat with spice mix. Heat oil in a medium pan over high heat. Cook onions until tender, about 1-2 minutes. Add mah mahi fillets and sear for 3-4 minutes per side. Reduce the heat to low, add garlic and cook fillets for 2 more minutes per side or until cooked through. Serve warm.
Basil Butter Shrimps
What you need:
• 1 1/2 kg. shrimp, peeled and deveined
• 1 1/2 lemons, juiced
• 1/2 cup minced basil leaves
• 1/4 cup butter, melted
• 3 cloves garlic, minced

• 1 red bell pepper, chopped
• 1 jalapeno pepper, minced
Cook rotini pasta in a large pot of lightly salted water for 8-10 minutes or until al dente. Drain and transfer to a serving bowl. Set aside. 2 Pastas With Canned Tuna
These two recipes contain both pasta and canned tuna, but the results are as different as summer and winter. The tuna pomodoro is tomato sauce served on top of whole-wheat spaghetti, while the second recipe is a baked mac and cheese with broccoli and tuna.
Tuna Pomodoro
This dish is light, delicious, and filling, and I think it is the best pantry pasta ever. In a recipe with such few ingredients, it will be apparent if you try substitutions like tuna in water instead of tuna in oil. I know from personal experience that it will not taste the same.
• 8 oz. whole-wheat angel hair pasta
• salt
• 2 tablespoons of olive oil (optional)
• 2 cloves of garlic, minced
• 1/4 teaspoon crushed red pepper
• one 14.5 can of Hunt's Diced Tomatoes in Sauce, undrained
• one 5 oz. can of tuna in oil
• dried basil, to taste
1. Bring a pot of water to a boil. Salt the water and add the spaghetti. Cook according to package directions and drain well.
2. In the meantime, heat the oil in a saucepan over medium-high heat. (If you'd like, you can save the oil from the tuna when you drain it from the can, and use 2 tablespoons of that oil.)
3. Add the minced garlic and crushed red pepper, and saute for a quick minute.
4. Add the canned tomatoes with the juices to the pot, turn the heat down to medium, and let simmer for about 8 minutes, stirring occasionally. Add the drained tuna and cook until warmed through, about 2 minutes. Add several generous dashes of dried basil. Stir to incorporate the ingredients. Serve with whole wheat spaghetti.
Tuna Mac and Cheese
For weeks, I had a hankering for tuna. Then the weather turned cold and I wanted broccoli soup. Since I make mac and cheese regularly, testing and developing recipes for my website, I thought I'd combine all these things together. The cheese sauce for this macaroni is made from canned soup.
• 1 1/2 cups elbow macaroni, uncooked<
• one can tuna, drained (I used 5 ounces, but you can use more if you want)
• half of a 12 oz bag of frozen broccoli
• one 10.5 oz can cheddar cheese or broccoli cheese soup
• 2 1/2 cups cheddar cheese, grated or shredded
• 1 teaspoon Dijon mustard
• 1/2 cup milk
• salt and pepper to taste
1. Preheat oven to 400 degrees Fahrenheit.
2. Bring a pot of water to a boil. Cook macaroni according to package directions. Place the broccoli in a colander and pour the hot water and pasta over the vegetables as you drain off the water.
3. Add the drained pasta and broccoli back to the pot. Mix the canned soup, mustard, tuna, cheese, salt, pepper, and milk. Stir to combine. Pour the mixture into a greased casserole dish. Bake for 15 minutes, top with the rest of the cheese, and bake for another 5 minutes.

What you need:
• 3 1/2 cups crushed tomatoes
